HOW TO CHOOSE KETO DIET FOODS

KETO DIET FOODS

Following the Keto diet and reaping all the rewards it has to offer is accompanied by one huge problem, what to eat!

People follow this diet for a number of health reasons like defeating obesity and diabetes. There are other reasons to use this diet plan, it will ultimately lead you to your ideal size and weight.

Don't expect a miracle over-night, I remind myself daily that I spent 65-years getting myself into this condition, I can devote a few months to trying to improve it.

DIABETES OR SOME OTHER MAJOR ILLNESS

If you have a major illness then you should consult your doctor before embarking on a diet change as comprehensive as Keto.

I personally do not believe Keto is a health hazard but I'm not a doctor and I don't know your condition. With all that said, check with your doctor but don't be surprised if he/she does not even know what the Keto diet is.

KETO FOR LIFE

Many people use some variant of the Keto diet to lose weight but then they return to eating low-cost carbohydrates that cause all their fat cells to swell and get large again.

Please note, the Keto diet is NOT the Atkins diet. Dr Atkins certainly understood the principles involved in low carb eating and made a name for himself but his recommendations were not the same as the Keto diet.

Don't eat Keto just to lose weight, follow this diet for the rest of your life and enjoy a healthy new you that will stay that way.

CARBOHYDRATE INTOLERANCE

Carbohydrate intolerance is a fascinating term. It means your body does not like being fueled by carbohydrates and all the sugar variants. If you have a lot of extra fat on your body then you're probably carbohydrate intolerant.

Back in grade school we were taught that your body stored energy in fat for you to use later. But what if all you do is keep adding more fat? When does my body burn that fat to get that stored energy?

If your weight keeps going UP, UP, UP then it should be obvious you're not burning fat, you're storing it for some day in the future when it will make you insane.

EAT DIFFERENT

If you do what you always do then you get what you always get. Keep eating low cost, low fat carbohydrates and your weight is certain to continue rising.

When you're ready to make a change the Keto diet plan is there to help you eliminate cheap carbohydrates from your menu. Get that total carb intake down to 30 grams or less per day and watch the weight go away.

The Keto diet is not new, it's been around since the 20's.

FINDING THE RIGHT KETO FOODS

By far the hardest part of following a healthy Keto diet plan is finding the right foods to eat.

Sometimes it seems all you can find are foods you should NOT eat, why is that?

It is because the big food packaging companies know you love the taste of sugar so they put it into almost EVERYTHING!

Sugar additives make foods taste like candy. The truth is, you should not be eating candy either, it's full of the worlds cheapest carbohydrates, it will spike your insulin response causing you to become more diabetic and it will expand the layer of fat residing on your person.

GET YOUR MIND RIGHT

Sugar, bread, ice cream, candy, soda pop, beer and many more items must leave your diet to enjoy the benefits of the Keto plan.

EXERCISE FOR OLDER PEOPLE, EXERCISE 02 WALKING

WILL WALKING IMPROVE MY HEALTH?

The short answer is YES!

A recent study (2018) concluded that one of the worst things you can do is NOT EXERCISE. Before you adopt an exercise routine consider discussing your plans with your doctor during your regular yearly wellness visit. Your doctor can check your blood pressure and order blood tests to ascertain a good starting point for your diet and exercise routine.

Exercise is not about losing weight but it DOES improve your health and you should consider doing some regularly (like four to six times a week). Your exercise routine should raise your heart rate up above your resting heart rate and you should maintain that level for 15-30 minutes at least three times per week (more would obviously be better).

Leisurely walking does not burn very many calories so consider stepping up the pace if you want to burn any calories at all.

If your goal is losing weight then you should focus very precisely on what you're putting in that large hole mounted directly under you nose.

THE TRACK
In our gym we have a 150-foot long track (around the perimeter of our porch), four laps around that is 600-feet, 10 of those four-lap sets is over a mile. We've avoided getting a running machine due to cost, maintenance and noise.

As an alternative to our indoor track we have an outdoor version that is just over 1/3 of a mile around the whole thing, three-laps is 5400-feet or just over a mile.

I sandwich laps around our track in between sets of weight lifting, this helps me keep my heart rate UP and in the right spot for conditioning and improvement. After working on this for four months I can do 16 sets of weight lifting exercises and 20 laps (12,000 feet) around the track in around one-hour and ten-minutes.

WALKING AND BLOOD PRESSURE
Daily exercise and eating the right foods has helped reduce my own blood pressure. Eating right has helped me reach and maintain my ideal weight while exercising has improved my energy and helped me feel more limber and healthy.

WILL EATING YOGURT FIX UNHEALTHY GUT?

You've seen the ads, now, know the truth.

Eating yogurt will help you build happy gut bacteria. 
True if you did not decimate the place with a gastronomic-nuclear weapon like antibiotics or maybe a baby aspirin per day. If you blow the place to bits with these drugs then Yogurt is not going to fix that anytime soon.

Eating yogurt is good for you and your digestive tract, just stick to eating yogurt and you'll be happier and healthier. Avoid the drugs previously listed.

If you need a pain killer to reduce bug bite itching or muscle pain or maybe recovering from dental work use Tylenol but try to use as few as you can because they're hard on your liver.

Avoid antibiotics as much as possible. We already know you don't want to become insensitive to the healing powers of antibiotics but you ALSO don't want your gut bacteria wiped out by a round of them. New research also indicates antibiotics may be instrumental in raising blood pressure and hypertension.

The world of little critters in your digestive tract is a good thing. Take care of them. It's odd thinking they're there but if you try to take care of them instead of fearing or ignoring or killing them, you'll be much more healthy and happy.

Our exercise sessions are divided into four-sets of 10-12 repetitions each. A set starts with the initial basic bar weight setup, then I add 2.5 pounds to the bar for each additional set so the weight gets progressively heavier by the set.

We use dumbbells for curling exercises and others. Currently we're using four different basic weight setups. These are also held together with Quick Change collars.

The dumbbells with chrome handles are solid steel and weigh three-pounds each.

We have our dumbbell workout station positioned directly in front of the Big 50" Fan. This blasts the person exercising with air to keep them cool.
COLOR CODED WEIGHTS HELP IDENTIFY WEIGHT SETUP QUICKLY

We've acquired weights from a variety of sources over the years which means a variety of shapes and sizes. By painting them with color coded markers it makes setting up various bars with the desired weight much easier. Color coding also makes it much easier to identify what weight a bar is setup with. 

BUYING GYM EQUIPMENT

Weight lifting is affordable, you can start with a single dumbbell and add on from there. 

Standard 1" bars are great for beginner to intermediate training, that will get you a couple of years down the road before you'll need to be thinking about olympic size 2" bars and platters.

Our bench will handle standard or olympic size bars and cost around $130 (delivered).

The Body Champ was on sale for $89+Tax at Academy Sporting. 

The inclined situp bench was around $40 from Amazon. It's a very light duty model but it works fine for me.

The small plastic weight retainers came from Amazon for around $4 each, they are worth it because they make it so fast to add or subtract weights from a bar. 

WALKING AND POWER WALKING

Power Walking is just walking longer strides more quickly and more forcefully. Some data suggests power walking doubles the calorie burn over walking leisurely. 

I walk in-between my weight lifting sets and use a small monitor to help me keep my heart rate in the best zone for me. 

4-LAP SETS = 600 FEET OF DISTANCE COVERED
I looked at running machines but these require maintenance and electric power plus they make noise. Instead I laid out a 150-foot long track around our screened-in porch. A walking set consists of four laps around the track and yields up 600-feet of distance. 

I regularly do 10 to 20, 4-lap sets during an exercise routine.

20x 4-lap (600') sets = 12,000 feet of distance or 2.27 miles total covered in-between my weight lifting sets.

GO SLOW, DON'T GET HURT!

This sounds simple but it's not. It is easy to hurt yourself, especially if you're out of shape and older.

Nobody will be impressed by feats of impressive straining so don't do it.

If you're really in bad physical condition consult with your doctor during your yearly wellness checkup about exercising.

MONITOR YOUR HEART RATE

The harder you work or exercise the harder your heart must work and this will push your pulse higher.

How high should YOUR pulse be?

I'm not a doctor and I can't tell you what's right for you but I can tell you how to monitor your pulse cheaply and easily.

This little monitor, available from Amazon for under $14, measures your pulse (the upper number) and the level of oxygen in your blood (the lower number). The pulse is the number I watch closely when exercising.

My normal resting pulse is between 55 and 72, normal movement and activity takes it up to the range of 75-88.

When I first began exercising I could easily get my pulse up to 110, spirited walking could get it up to 95-100. After three months of training for half an hour per day, six days a week, and following the Plant Paradox diet I have a difficult time getting my pulse up to 95.

LOW CARB ALTERNATIVE TO RICE AND NOODLES, WEIGHT WATCHERS SKINNY PASTA

Throw away any brand bias and get ready for some delicious food, rich in fiber and low in net carbs, it's Weight Watchers Skinny Pasta, (aka Konjac root).

There are several brands of Konjac on the market but Weight Watchers had consistent great reviews. It does not smell funny, it's super easy and fast to prepare, blends well with other foods and tastes.....like nothing. Just my personal opinion but I think this product has virtually zero flavor of its own which lets it pair with and support other delicious foods and toppings; like real melted cheese on top. I also love mixing it with steamed broccoli or tuna for a dish that is sure to fill me up with delicious yumminess. 

NOODLES, SPAGHETTI OR RICE
Several varieties of finished shapes are available, they're all the same thing but come in different forms to complement what you're cooking up. My favorite is the rice size and shape, it's great where you might have used a bed of rice for a main course like a fish fillet. 

ZERO NET CARBS

Konjac root is zero net carbs to your diet because the fiber content is so high vs the carbs contained in it.

WATCH OUT FOR IMITATIONS
We were at Publix market and they had an alternative brand of Konjac root which we bought without reading the label. When we got it home we found ingredients that were not to our liking, we did not eat it. The Weight Watchers brand does not have harmful additives, just the food you're looking for.

NEW MICHELOB GOLDEN ULTRA MADE WITH ORGANIC GRAIN

WHAT IS ORGANIC?

The USDA determines what the word "organic" means as it's applied to the marketing of foods.

This is from their website: The use of genetic engineering, or genetically modified organisms (GMOs), is prohibited in organic products. This means an organic farmer can’t plant GMO seeds, an organic cow can’t eat GMO alfalfa or corn, and an organic soup producer can’t use any GMO ingredients. WHAT IS STEVIA? ISN'T IT ANOTHER MAN MADE SWEETENER?

Stevia is not an artificial sweetener! It is an all natural product.

Stevia is a relatively new word in modern culture. Stevia is a sweetener extracted from the leaves of the plant Stevia Rebaudiana. It is zero calories when used in food.

Stevia is more expensive to produce than other sugar substitutes so naturally big food manufacturers are not jumping to embrace this product and subsequently raise food prices to account for the difference in cost. People want cheap food.

If you put quality ahead of quantity then look for foods that have no sugar, no high fructose corn syrup (HFCS) and no other artificial chemical sweeteners.

Stevia is typically packaged in small green envelopes for single serving sizes.

BAD CENTRUM FOR SENIORS, YOU'VE GOT SOY, BLAHHHHHHHHH

I'M MAD!

I'm trying to eliminate lectins from my diet but they keep creeping in from the weirdest places. Today, to my horror and disgust I discovered my multivitamin has soy in it. It's now in the trash.

So long Centrum for 50 and older, I hate you now!

I'm now taking a hypoallergenic multiple vitamin that is made without milk, soy, egg, yeast wheat, rose hips, fillers, binders, starch, colorings, flavorings or preservatives.

I'm supplementing my multivitamin with specific additional supplements that get me close to my daily nutrient goals.

DR GUNDRY ON ET


ET's Keltie Knight sat down with the book's author, Dr. Steven Gundry, who revealed everything you need to know about the Plant Paradox diet plan. 

"I used to be 70 pounds bigger than I am now despite running 30 miles a week and going to the gym one hour a day," Dr. Gundry reveals. "And so I eliminated foods that turned on our immune system, which are called lectins." 

1. You're probably eating a lectin-high diet
Lectins, as Dr. Gundry shared, are carbohydrate-binding proteins, found in the skin and seeds of vegetables like tomatoes and cucumbers, as well as plant-based foods like grains, oatmeal, brown rice and pasta. 
"Over the last 50 years, we have increased our lectin consumption unknowingly and coinciding with that, our autoimmune system has skyrocketed," he explains. 

2.  Swap out foods containing lectins
"The first thing you do is make some swaps, just like Kelly Clarkson did," Dr. Gundry says. 
"So, you get rid of oatmeal. It's a grain, a really nasty grain, you get rid of brown rice, you get rid of whole wheat. There's some great substitutions that don't have lectins. For instance, this is millet. Some people call it bird seed. Sorghum is fantastic," he continues. "When you remove lectins, weight loss is the natural consequence."

3. Choose your cooking method wisely
Dr. Gundry is a big fan of beans -- after a round in the pressure cooker. 
"Beans are great for you with one problem... they are some of the highest lectin-containing foods there is. If you pressure cook them or even buy them pressure cooked, then they're perfectly safe and really good for you, but beans by themselves are no good for you," he explains, warning people to stay away from slow cookers.
Other ways to remove lectins in foods include boiling, fermentation, sprouting, peeling and deseeding. 

4. Skip breakfast 
"What I'd actually like people to do is not eat breakfast. It's actually the least important meal of the day," Dr. Gundry claims. "Do you think our ancestors crawled out of our cave and said, 'What's for breakfast?' There wasn't any breakfast. There wasn't any storage system. We had to find breakfast and maybe that was lunch when we broke fast. That's what breakfast means."

5. Go nuts
"Eat nuts!" Dr. Gundry suggests. "Get a handful of walnuts, eat them everyday."

TRACK YOUR WEIGHT AND DIET USING THIS FREE WEB APP

I've looked at over half a dozen applications in the past, they were all too hard and did not yield enough useful data for all the hassle. This led me to develop a printed form for tracking my calories, carbs and protein intake. Sadly the printed form took a lot of manual work.

The Cronometer (at www.cronometer.com) takes tracking to a whole new level. Is it perfect and exact? NO! But after working with it I've become a fan and enter my data on a daily basis.

THE DIARY WINDOW
This is where you're going to spend most of your time. You'll access the calendar to pick dates, press the "ADD" buttons to add foods, exercise, biometrics (like if you lift weights) and notes.


THE CALENDAR

The calendar is where you pick the date you're going to enter data for, the date in solid green with white letters is the active date. The diary will reflect the foods, exercise and biometrics you record for this date.

THE ADD BUTTONS

In the Cronometer you click on these buttons to add data to your daily diary. Add Food will be the most commonly pressed button, it opens a data-base where you type the name of what you ate and it adds the nutrient information to your diary.

COPY PASTE MENU
The little gear icon opens a drop down menu, this is used for copy and paste functions. If you hold down the shift key you can select multiple non contiguous items out of one days diary entries and paste that into a different day. This can be a big time savings if you're eating the same thing regularly.

I set up a date in the past where I've collected all my favorite foods and diary items, that way when I need something I eat regularly I go to that date instead of hunting in the data-base.

FIND WHAT YOUR DIET LACKS
The Cronometer features this excellent panel of nutrient information. If nothing is "selected" in the diary then the totals for the day will be showing. If you select a single item in the diary then its specific details will be shown. To select a diary item just click on it and it will highlight, click it again to deselect it and return to overview.

In my first week of tracking with the Cronometer it helped me identify two important things wrong with my diet, I was not eating enough calcium and I was not eating enough fibre. Three weeks later my data showed I was barely eating 50% of my potassium RDA so now I'm eating a supplement with each meal.

To get results like this means you must spend a few minutes each day feeding the Cron with what you fed yourself.

Almost every food known to man is already inside the Cronometer so you don't need to do a lot of typing, just search and you'll find what you ate.

You can create your own custom recipes so it's fast to look up something you make in your kitchen, like salad dressing, I make mine with rice vinegar because it has zero carbs and zero lectins. I created a custom recipe for my dressing which is a 1:1:1 MCT oil ; Olive oil : rice vinegar.

PROFILE FOR WEIGHT LOSS
The most popular use for Cronometer is weight loss. In your Profile you can set what your goal is,  maybe it's just to eat right. If you want to lose weight you can set it to half a pound a week, or a pound a week or more. With this in your profile all the calorie data on the diary page will be set to help you meet your goal, just follow the message in the Diary.

Your most important calorie information is right here. Notice how it tells me I have 622 left today, I think I'll have some cheese for a snack.

THE DIET "THEY" DON'T WANT YOU TO KNOW ABOUT

EAT MORE FRUITS AND VEGETABLES AND GRAINS AND BREADS
but what if they're wrong?

All my life I've been told to eat fruits, vegetables, beans, corn, wheat, bread and legumes while minimizing meat and saturated fat. Since the late 70's the chant of "fat free" and "no saturated fat" have been ground into our heads from every media source and giant packaged food producer(s). Academia, the US Government and even the American Heart Association have all preached this religiously.

Starting in the late 70's I escorted my father through over 20 years of clogged arteries, surgeries and drugs to prolong his life. He only made it to age 80. I'm determined to do better than that in spite of recently being diagnosed with prostate cancer.

WHAT THEY DON'T WANT YOU TO KNOW!

AGRICULTURAL CHAOS
Since I was a very young child we've been told by the USDA to eat a lot of whole grain and bread based products, but what if that's wrong? Who would be affected if everyone found out the wheat in bread was actually harming your body? The agriculture industry would collapse, bakers and bread producers would be instantly out of work, it would be chaos.

What about corn and soy, are they ok? NO they're also packed with lectins (more on lectins ahead)!
If corn, soy and wheat are out, there go all those salty snack crackers, right? No more pasta either. No cookies. No CANDY. Rice (except in some very limited circumstances) is out too. Grain and agriculture industries would be wiped out and more jobs lost when everyone finds out this stuff is actually far more damaging to your body than you ever possibly imagined.

BEVERAGE INDUSTRIES WIPED OUT
It's not just the calories and fat that's killing you, it's the lectins in these foods stimulating and poking your immune system, keeping it on edge, very busy and unhappy.

If grains are out, what about beer? Gone, forget about it! Learn to drink something else. The carbs in a single 12 oz pale ale are over half of your total daily requirement for an entire day, not to mention the fertilizers and insecticides the grains were subjected to during their manufacture. The alcoholic beverage industry would be turned upside down and ruined for years if everyone came to realize the truth at once. They certainly don't want you to know about how grain harms your body. It's blasphemy! Right?

FRUIT INDUSTRY DESTROYED
Eat lots of healthy fruits, they're rich in vitamins like C, right? But what if you got all the vitamins your body needs to function directly from other foods you're already eating? What if fruit was just sugar, calories and carbohydrates? What if everyone found out you don't really need to eat fruit, that it is just essentially candy? Who would be affected if everyone found out fruit was really unnecessary in your diet and actually may be doing you more harm than good? The citrus industry would be wiped out. Orchards would lay dormant. Jobs would be lost, more chaos.

DAIRY INDUSTRY RUINED
Over in Europe they let their cows go out in the fields and eat grass, it's free food for the cows and sustainable where they have the land to support it.

Over here in America we like to feed our cows corn, soy and calcium carbonate for their indigestion (from eating all the corn and soy which are unhealthy for cows). What if everyone found out that feeding genetically modified corn and soy to cows created food products that are harmful to the bacteria in your gut? Who would be affected? Think about all those gallons of milk moms are buying to feed their kids? Ice cream is out! Upsetting the American Dairy Industry with such information would bankrupt businesses and eliminate jobs, more chaos.

FAST FOOD INDUSTRY NIGHTMARE
Fast food restaurants would be hit very hard if you found out that 99% of what they're selling you to eat is actually doing your body serious long term harm, like a 1000 tiny little cuts all throughout your body.

That big sub sandwich is actually a torpedo bomb to your gut, filled with useless carbs, sugar and worse, lectins that penetrate your single cell intestinal walls and move freely throughout your body while delivering very little actual nutrition which your body really craves (that's the hunger response calling).

There are too many corporate entities that would be devastated by telling the truth, hysteria would run wild as people scrambled to find foods to eat that are not making them fatter and sicker.

The bun for a Big Mac is over 200 calories but it's 39 grams of carbohydrate which is more than someone on a Ketogenic diet typically eats in a whole day. Sandwiches made on bread are the perfect storm of harm for your body causing spikes in insulin and stored fat.

PHARMACEUTICAL INDUSTRY PROBLEMS
It should come as no surprise that the pharmaceutical industry is in no hurry for the population to become more healthy. They make WAY too much money selling us drugs to correct for all the ills caused by what we're eating. As an example statins are a huge profit center for drug producers but significant evidence shows that eating low-carb can eliminate the need for this drug (which has awful side effects in about 10% of people including ME!). I'm not saying all drugs are bad but if everyone quit taking the most common ones there would be chaos in the industry.

CHEMICAL COMPANY CHAOS
Roundup has become the profit leader for Monsanto and company. Residual amounts of Glyphosate the active chemical in Roundup are now found in many streams and waterways. The state of California says Roundup causes cancer and there are new law suits forming in the courts. Big agriculture has found new ways to use Roundup that has increased the amount of glyphosate we can measure in the foods treated with it. Roundup is one of the best excuses for going organic and eating non GMO foods.

VARIOUS DIETS EXAMINED

STANDARD AMERICAN DIET (S.A.D.)
This is what most people are eating and it shows, we've got 70% of our population "over weight" and 40% are obese. Most people on this diet have no idea how many calories and carbs they should eat nor do they have the slightest idea how many calories and carbs they actually consumed in any given day. On this diet you just eat whatever the heck you want and say hello to massive amounts of fat forming all over the body. The accumulation of this fat is one of the biggest causes of cancer, fat surrounding your internal organs can have very serious health consequences.

CALORIE RESTRICTED DIET
A restricted diet is one that limits what you're allowed to eat. This can take many forms but the most common weight loss diet is based on "restricted calorie intake". Restricting or reducing calorie intake has worked to reduce my weight but it's not been effective at keeping the weight off. I restricted my diet to 1500 calories and 150 grams of carbs for several years and it helped me drop about 40 pounds but then I got stuck and could not lose the remaining belt of fat that has surrounded my abdomen all my life. Beside not losing the final fat I was hungry all the time and craved carb laden snacks like oranges and popcorn and pretzels (in 100 calorie bags to provide portion control).

THE KETOGENIC DIET
The Ketogenic diet restricts carb intake, this causes the body to burn stored fat and in most cases people lose weight, some people lose A LOT of weight using this diet. In order to get the body to burn fat you must reduce carb intake to around 25 net grams or less per day. This means sugar in all forms is OUT! (Replace it with Stevia an all natural zero-calorie sweetener).

The Ketogenic diet can be traced back to the 1920's when it was successfully used to treat seizure related diseases like Multiple Sclerosis. Today people all around the world are embracing the Ketogenic diet because it has been so successful for people trying to lose weight.

What if you could eat A LOT of food that tasted great, filled you up and caused you to lose weight? Could you give up bread and sugar sweetened foods to achieve this?

THE ATKINS DIET
Isn't this the same as the Keto diet? No it's not. Each has it's own food lists of what's acceptable. Do your research and you'll see that the Keto diet is quite different though many of the foods are common and shared by the two diet plans.

Unfortunately many people have used the Atkins diet plan as a way to dump weight, then they discontinue eating low-carb and all their weight comes right back. Eating low carb is a way of life, get used to it, do it forever, be more healthy and lighter weight too.

Since Dr Atkins passed away the corporation he left behind has manipulated and repurposed the diet for greater profit. Many Atkins branded food products such as their candies contain sucralose a sweetener that can cause severe gastrointestinal pain along with destroying your healthy gut bacteria. That's not a recipe for health in my opinion. I personally avoid Atkins based products.

EAT FAT, GET THIN PLAN
One of my favorite doctor/authors, Dr. Mark Hyman has published a book and diet called "Eat Fat, Get Thin". This is another form of restricted diet where carbs are dramatically reduced in favor of eating foods containing fat and oil.

I have the Audible copy of the book and it's read by Dr. Hyman himself. It's wonderful to hear his enthusiasm as he fills you in on the who, how and why of eating fat and getting thinner.

THE PLANT PARADOX DIET
The Plant Pardox program by world famous heart surgeon, Dr Steven Gundry is one of the most restrictive of the low carb diets. Dr Gundry recommends reducing consumption of products containing animal protein in favor of more leafy greens. Dr Gundry asserts that you won't need to count calories or carbs, you'll naturally get to the correct amount as you pursue the Plant Paradox Program.

Dr Gundry says the lectins contained in most foods cause an auto-immune response by your body, essentially your body is attacking itself. If you get rid of the lectins the bacteria in your gut become healthy and your immune system can focus on things like fixing what ails you instead of attacking you.

 The damage by lectins is done on a minuscule level by a variety of things that trigger your body's immune system and keep it agitated at a low and continuous level. Additionally "things" in our "Standard American Diet" flat out kill and destroy the good bacteria that should be living in your gastro intestinal tract.

The bacteria in your gut are part of the digestive equation, you can't ignore them or they will punish you with a variety of problems like irritable bowel and acid reflux (just a couple, there are many more).

A restricted diet is one that is made up of specific foods for your body, you're restricted to these things in order for the chemistry in your body to heal and repair itself. Get ready to be shocked because you're going to give up a lot of things you thought were ok to eat.

I predict there will be a full-on assault to Dr Gundry's diet recommendations because WAY too many big corporations will be harmed by the knowledge their food is actually BAD FOR YOUR HEALTH in ways we've not understood until very recently!

Don't look for a happy reception to this book from our Government watchdog agencies either, they need to protect the diet status quo to prevent panic in the streets. If you're worried about your food supply you could find out what grows well where you live and consider growing some healthy food right in your own backyard.

ULTRA RESTRICTED DIET FOR CANCER PATIENTS
There is new information that has gained public knowledge through books, forums and online social media. Some doctors are bringing forward new ideas for treating patients with diseases like prostate cancer.

The carb restricted Ketogenic diet is not new technology but taking that diet plan and removing lectin filled foods shows great promise for sustainable weight loss, curing diabetes, curing heart disease and many other positive health benefits. Needless to say industry giants (previously mentioned) are coming out swinging against this information, calling it a "dangerous fad diet".

Instead of ruining the patients life with surgery, radiation and drugs laced with highly toxic cancer killing chemicals new patient studies since 2015 are more than suggesting cancer can be defeated or controlled through diet.

But wait, isn't that what killed Steve Jobs? He was fanatically attached to his fruititarian diet and was convinced he would beat cancer by following it. By the time he decided it was not going to work it was too late for traditional methods to save his life from a very aggressive form of cancer.

Dr Gundry's new book, The Plant Paradox, delves into a lot of the science about which foods are killing you and how they're doing it. This is one of the most restrictive diets because it limits protein intake from animals to two-to-four ounces a day or less, this includes meats, milk and cheeses. It stresses consuming oils rich in MCT, olive oil and ghee (butter with the milk fat removed).

Grains like corn, wheat and soy are all OUT! They contain carbs you don't need and lectins that are literally killing you slowly. This means no bread, no chips or salty snacks and of course no beer.

Some nuts are IN! Pistachio nuts are full of nutritious oil, so are walnuts and pecans.

Some distilled spirits are acceptable, those aged in oak barrels contain polyphenols which are good for your body. This means Jack Daniels and Anejo Tequila are both acceptable in small quantities.

WHAT'S RIGHT?

My next blood test is about 45 days away, I'll have three solid months of pursuing the Plant Paradox diet under my belt when the nurse draws that blood sample, we'll get to see the results in black and white.

The indicators are good, after a couple of years of 5.5 PSA test results and 6.0 in January 2018 when I went for a prostate biopsy at the Mayo Clinic my latest test result was 4.8. The 4.8 reading followed a period of even greater reduction in carbs I was consuming, down from 150 to 100 but still far from a low carb diet plan. Currently I'm restricted to 1400 calories per day and less than 25 grams of carbs.

UPDATE: PSA in September 2018 was 3.4 (down from 4.8), the diet is working, I'm now officially back in the normal range.

WHY THEY DON'T WANT YOU TO KNOW
As I've already pointed out there are entire industries that would be wiped out by a mass realignment in our thinking about food and diet.

After sixty years of preaching this same dietary advice, over and over there is no hope for massive change, it would just be too economically devastating and embarrassing to those who've promoted and put forward this misinformation for so long.

SHOW ME THE DATA
Show me the data that says the Standard American Diet is making us more healthy and I'll show you a study financed by someone with something to lose or a magazine pundit trying to preserve their high-dollar corporate ad sponsors (don't look for the Good Housekeeping Seal on the Gundry diet lol).

I'm not one to promote conspiracy theories, I'm just a retired guy with cancer but likewise I'm not going to be led to the slaughter without a fight. My partner and I have spent the last six months combing the internet for data and solutions ever since I was diagnosed with cancer. We're still looking for the data that says SAD is working right and making folks more healthy. We're still looking for conclusive evidence that eating like "they" say we should, rich in fruits, vegetables and grains, low in saturated fats, is making Americans more healthy.

The S.A.D. data that is all too easy to find is that over 70% of Americans as a whole are overweight and over 40% of Americans are obese. These facts come right from the US Center for Disease Control (a different branch of the same government that tells us to eat this diet). Obesity and weight gain appear to be subjects they actually can't repair with the standard american diet. The low fat that has been marketed so hard since the early 1980's is clearly not working for the mass public.

The obesity is not just because you're eating too many calories or not getting enough exercise (though those may be contributing).

The problem is eating all the WRONG foods which are filled with things that are doing this to us. Big corporate agriculture, the citrus industry, the dairy industry, the beer industry and just about every other big-business food provider is creating food that is making you fat and ultimately ill. A recent large study showed that eating packaged prepared frozen foods, which are full of preservatives, are causing cancer, you don't have to search the internet too hard to find many instances of this data.

PEOPLE ARE HEALING BY HELPING EACH OTHER
What if you could eat food that was good for you? What if you could eat food that filled you up so you did not get hungry for all those yummy little bags of chips and pretzels. What if there were soda's you could drink that were not filled with sugar or worse, man-made chemical sweeteners that kill your gut bacteria, penetrate the walls of your intestine and help you become diabetic?

Our ancestors did not always eat breakfast, they had to run through the woods and find their food. This would sometimes cause delays (fasts) between rounds of eating.

The right diet leaves you feeling comfortably full but not stuffed. When you give your body the right food things begin to correct themselves naturally. When your immune system is no longer being tortured by your normal daily diet intake it is free to do what it's meant to do, fight disease.

DO WHAT WORKS FOR YOU
I've been overweight most of my life. It really caught up to me in the last 20 years, something had to change. When my weight was hitting over 245 pounds in 2003 my knees were in constant pain, it hurt to walk, I had pain in my hips and shoulders too. Since dropping to 175 pounds the pain in my legs is all gone. The pain in my shoulder is also gone. I've still got some persistent arthritis in my neck and left hand but I have noticed my hand is getting less sensitive to the joint pain so perhaps it's also diminishing, time will tell.

Don't do nothing! If you do what you always did then you get what you always got. Is that what you want?

Find the diet plan that helps you lose weight and feel great, it's more than just possible and it does not have to be painful, taste yucky or be weird.

YOU ARE NOT ALONE!

YOU MIGHT BE SITTING IN A ROOM BY YOURSELF BUT YOU ARE NOT ALONE!

Down inside your gastrointestinal tract are critters, they live there and help you digest food. The usual suspects are not bad guys and keeping these little workers happy will improve how you digest food.

Eat the wrong stuff and you kill the workers, this leads to indigestion, gas and discomfort.

Drugs like antibiotics, Aspirin, Ibuprofen and Advil wreak havoc and devastate the population of critters in your gut, think ATOMIC bombs going off, how many of the good guys survive that?

Spend a little time and consideration taking care of your gut bacteria and it will reward you with improved health, digestion and weight control.

ARTICHOKES IN THE CROCK POT

IT'S SUMMER, WHO WANTS A HOT KITCHEN? 
USE THE CROCK POT OUTSIDE ON THE PORCH

We've got one of those extra large CrockPot slow cookers, it's just perfect in size for two or three artichokes and it makes it so simple to have an amazing lunchtime treat. 

I cut the stems off straight across the bottom so the artichokes stand up nicely, then pour in two cups of water and cook them on high for four-hours. Don't overcook them because artichokes turn into mush and fall apart. 

The final topper is melted Ghee for dipping the artichoke leaves and heart in, this is like eating candy and it's so good for your gut bacteria. They'll be cheering when you eat this.

LECTIN FREE DIET IMPROVES SLEEP


CAN YOUR DIET AFFECT YOUR SLEEP?

For years I've had a problem sleeping all the way through the night. After I switched to the lectin-free, Plant Paradox diet my sleeping improved dramatically. 

Prior to beginning this diet I assumed the reason I was getting up to pee eight times a night was due to my enlarged prostate and the small amount of cancer doctors have found in me. 

After just a week on the Plant Paradox diet something amazing began to happen, I was sleeping like a kid again and only getting up to pee once or twice in the middle of the night.

Now, three weeks into the diet, sleeping is fun again, we're enjoying afternoon naps and feeling great.

Sleeping has never felt so good and my gut has never been so happy.

DOES MILK SOURCE REALLY MATTER? WISCONSIN VS EUROPE

CHEESE FROM WISCONSIN OR EUROPE

So I've been eating the Lectin Free diet for almost three weeks and have never been more satisfied hunger wise, my digestion has been amazing.

We had a fairly large amount of high quality parmesan cheese in the fridge from before we threw-out all the bad stuff, I think we kept it because it was previously something we loved to eat on cauliflower and broccoli plus it was upscale and premium quality cheese from Wisconsin. It never made me sick before, or did it?

Yesterday morning was an egg day, I started off with two Omega-3 eggs with two kinds of onions mixed in and cheese on top. I've been eating this every other day for a couple of weeks and had no problems. I got a little lazy and did not feel like cutting cheese slices from our stash of fancy cheese from Italy, Ireland and other places in Europe. Their animals are grass fed instead of our American corn-fed beef which is where the milk comes from.

YOU ARE EATING, WHAT THE THING YOU ATE, ATE!

My eggs were topped with made in USA Wisconsin cheese and within 45 minutes of consuming my breakfast my stomach was churning and bubbling in painful and disturbing ways. Mary had consumed a tiny bit of the offending cheese the day before and she related that her experience was similar, after eating the affected cheese her gut was not happy.

Needless to say we've disposed of the offending cheese and are sworn to eating only the good stuff in the future.

Say what you want about how your food sources are working for you, following Dr Gundry's Plant Paradox diet is the best thing that has happened to us in a long time.

WAS THE CHEESE SPOILED?

Nope, it was made with milk from corn-fed cows which was laced with those evil little gut-bacteria destroying monsters. My stomach reacted fast to the lectins being reintroduced into the now happy world of gut bacteria inhabiting my G.I.T., the results were immediate and undeniable.

FIXED

After eating the offending cheese my gut was unhappy for about two hours, until we had lunch, a big juicy crustacean was on the menu accompanied by a green salad. We used our standard salad dressing mix (mct oil, olive oil, balsamic vinegar) and we used our standard Ghee to dip the lobster pieces in instead of butter with milk fat in it. By early afternoon my gut was back to happy and so long as I don't eat any bad stuff, it's gonna stay that way.

THE LECTIN FREE DIET

AND NOW FOR SOMETHING COMPLETELY DIFFERENT

We've examined calorie counting and restricting food intake to more healthy items. Now we're going to explore a whole new thought with regard to foods and diet.

Dr Steven R Gundry has rocked the dieting world with his book and diet, The Plant Paradox. The paradox is that many of the so called healthy foods we've been told to eat are packed with proteins called lectins which ultimately hurt us as part of the process of prolonging the individual plant species.

In plants lectins provide a protective mechanism to prolong the species. When these plants are eaten by humans poor health may be the result because they trigger the immune system to go to war and protect the body which most often results in inflammation and weight gain.

Mary found "The Plant Paradox" book by Dr. Gundry and quickly read it. We've since purchased the Audible version and listened to the book together.

Dr Gundry has documented cases of cancer being reduced or eliminated all together by persons following the diet, since I've been diagnosed with Prostate Cancer and am currently under the watchful eye of a Urologist it seems like a good time to try any and everything possible to prolong my life.

On June 1st of 2018 I began to follow the Plant Paradox diet, Mary was already at least a week into it. After two weeks my weight is down six pounds and inflammation all over my body seems reduced.   Dr Gundry asks that a person gives the diet six weeks before evaluating the overall effect.

WHAT YOU CAN'T EAT

This is a highly restrictive diet which means you're losing a lot of the things you've been eating all your life. Many of the things we've been told are good for us are now, according to Dr Gundry, bad for us to consume.

In my previous calorie-restricted diet I had success with using 100-calorie bags of snacks as portion control to maintain my daily intake of calories and carbs. These little bags are now all gone since they were filled with wheat and corn, both of which are chock full of lectins.

Beer is gone! I'm seriously bummed about this one. I've been drinking beer all my life, now it's gone! No more yummy pale ale. No more I P A. Not even a Heineken or a lowly Bud Light. Beer is made from grain, grain is the enemy, if there is the slightest hope I can beat cancer by not drinking beer I'm ok with that.

French Fries are out! Not even a few. Sweet potatoes don't have the bad lectins white potatoes have so they are still on the YES list.

If you drink milk it should be A2 type. If you eat cheese it should be made from A2 type milk.

Almost all fruit is out on the lectin free diet. Why? It's just candy, sweet stuff, picked green, ripened artificially with gas and served to your packed with inflammation inducing lectins. The one YES is local fruit, that is picked ripe, in season. If you must eat fruit this is all you get.

Tomatoes and fruits with seeds are out too. What? Apparently the Italians have known about this for years. Cans of Italian tomatoes are peeled and deseeded to remove the lectins. If you're willing to peel and deseed them then you can consume tomato flesh.

PLANNING IS KEY
Planning the food you're going to eat is the hardest part of the Lectin Free Diet. You won't find lectin free food in restaurants, they're filled with foods packed with inflammation causing lectins.

HOW DO LECTINS HURT YOU?
Lectins are large proteins which attack your body through the human gut system. The large intestine is just a single cell thick so when the barrage of inflammation inducing lectins come sailing in they excite an immune system response, stick between tissue lining cells and ultimately breach the wall and make their way into other parts of the body where they're not supposed to be.

In plants lectins are a protective mechanism to assure reproduction and sustain the plants existence. In humans these lectins agitate the immune system and cause inflammation.

WHO IS DR STEVEN R. GUNDRY?
Dr Gundry was a heart surgeon, regularly doing multiple heart bypass operations on people with arteries lined with shortening-like fat. After years of success he turned his attention to the "why" of the illness befalling these patients which ultimately led to "The Plant Paradox".

Unlike many fad diets this one is backed by a real honest to goodness surgeon, scientist and medical doctor. The data has been peer reviewed and the only people calling foul are the ones who ultimately derive their lively-hood from making foods packed with lectins (which in case you missed it, are killing you). As you might imagine enemy is gearing up the propaganda machine to put down the data and encourage you to keep eating the same things that are making you gain weight and have poor health.

Fast food restaurants are lectin bombs. Not only that their foods are packed with chemicals which are also becoming known for their toxicity.

My father was a Phd chemist at Monsanto and helped develop RoundUp herbicide, he was proud of their accomplishment and assured me this was safe for humans, you could even drink it and not die. I never saw him test that last statement. All of this was going down 45+ years ago.

Now in many parts of Europe RoundUp is illegal and products produced with it are labeled as cancer causing. The state of California has also ruled that RoundUp causes cancer.

RoundUp is now routinely used in harvesting crops, it's much easier to harvest dead dried up plants than vibrant green ones so they spray RoundUp on the plants to finish them off for harvest. This leaves the plant material with a nice fresh coating of RoundUp. Does it wash off completely? What do you think?
