IT'S SUMMER, WHO WANTS A HOT KITCHEN?
USE THE CROCK POT OUTSIDE ON THE PORCH
We've got one of those extra large CrockPot slow cookers, it's just perfect in size for two or three artichokes and it makes it so simple to have an amazing lunchtime treat.
I cut the stems off straight across the bottom so the artichokes stand up nicely, then pour in two cups of water and cook them on high for four-hours. Don't overcook them because artichokes turn into mush and fall apart.
The final topper is melted Ghee for dipping the artichoke leaves and heart in, this is like eating candy and it's so good for your gut bacteria. They'll be cheering when you eat this.
